Understand the iPhone Backup
During a sync, iTunes not only syncs the managed information and media covered earlier in this section, it also creates or updates an iPhone Backup. The Backup contains almost all the non-audio and video data on your iPhone, data that would not otherwise be synced. In particular, it includes notes from Notes, text messages from Text, and most settings from Settings (such as newly created email accounts).
