Association colloids as delivery systems: principles and applications in the food and nutraceutical industries

Abstract:

Surface active molecules such as polar lipids and surfactants self-assemble into association colloids that include micelles, liquid crystals and microemulsions that are used to design delivery systems for nutraceuticals, vitamins and minerals. The first part of the chapter provides a general overview of lipid absorption and the role of bile salt micelles and lipoprotein assemblies in the process, as an example of how nature uses association colloids.
