Bioactive food packaging strategies

Abstract:

This chapter reviews the latest developments in novel packaging concepts comprising active and bioactive packaging technologies. While active packages are developed to play an active role in food preservation, bioactive packaging is a novel concept of technologies intended to help in the production of functional foods, whose bioactive principles and actuators are devised to be contained within packaging or coating materials.
