Abstract
This chapter discusses how modelling in the food industry has developed in complexity with increasing computing power and the areas in which it should develop. Developments in multiscale modelling and in understanding how food is broken down and digested from the mouth to the gastrointestinal tract are needed. It is important that models, at whatever scale and complexity, take into account industrial reality and the need for consumer benefit.
